Know What You Are Buying

The “extra virgin” label is usually only given to oils extracted from the first cold-press. Not unlike extra virgin olive oil, extra virgin avocado oil from the first cold-press is considered the highest quality oil available. Unless an oil is explicitly labeled "extra virgin," it is safe to assume it is not extra virgin. Refined avocado oil is often marketed as "100% pure" or simply as "avocado oil."  Additionally, many avocado oils on the market are a blend of extra virgin avocado oil and refined avocado oil. Blending the two oils is an inexpensive way of adding flavor and color to otherwise flavorless refined avocado oil. 

Extra Virgin Avocado Oil Production Standards

Extra virgin avocado oil has been produced by simple cold-pressing  using temperatures less than 50°C (122°F) to extract the oil. During the malaxing (mixing) process, the temperature is constantly monitored by our oil millers. Malaxing is an important step in blending the avocado pulp to uniformity and gently and naturally bringing the oil out of the fruit. Cold-pressing using a simple centrifuge allows the oil retains all its color, flavor, aroma and natural antioxidants. By cold-pressing grocery store quality fruit, we are able to produce our flavorful, emerald green oil. Oil extracted from a first cold-press is made without the use of any additives other than water, which is added during malaxing to aid in the mixing process. The water is then extracted by centrifugal force. 

Other Grades of Avocado Oil

Other grades of oil such as virgin, pure (refined) and blends are usually extracted at high temperatures. Additional processes and sometimes chemicals solvents are used to extract the oil from the avocados. Refining changes the oil's smoke point, shelf stability, color, flavor, acidity and nutritional profile. Since all the oil's natural waxes are removed during the refining process, refined avocado oil can withstand higher cooking temperatures. Along with many other distinct nutritional differences, extra virgin avocado oil is the only grade of avocado oil that contains significant amounts of the antioxidant vitamin E.
